Two Guernsey Girls | The Inside Scoop On Rare A2 Guernsey Dairy Products

Two Guernsey Girls Creamery, a small family-owned operation in Freedom, Wisconsin, has been delighting customers with its high-quality A2 milk dairy products since its official launch in July 2021. The creamery first started with a small herd of five Guernsey cows, producing about 180 gallons of milk in weekly production and has since grown to thirteen cows, producing about 700 gallons of milk per week. Owner Tammy Fritsch and her daughter and co-owner Brianna Fritsch owe the increase in popularity to their dedication, hard work, and their nearly impossible-to-find A2 milk-producing Guernsey cows.

What is A2?
The designation “A2” refers to the type of protein that is found in this specific type of milk. Most milks contain both an A1 and A2 beta-casein protein, but A2 only contains the latter. Many people find digestion of milk exclusively containing the A2 beta-casein protein to be far easier on their system than consuming milk with both proteins, which makes this type of milk heavily sought after. Tammy explains that her personal experience with A2 milk began back in 2007, when her daughter was diagnosed with lactose intolerance. “We had to drive down to a Guernsey Farm in Illinois; I got some of their milk, and she was great on it, and I thought, this is the ticket,” said Tammy, “That’s how we got into Guernsey cows.” The primary protein in human milk is also the A2 beta-casein protein.
The Two Guernsey Girl Difference
Tammy explains that while the A2 designation of their milk is one reason for their popularity, the milk that they produce also has a far higher fat content than what is typically found from grocery store producers. Two Guernsey Girls fine-tunes the diet of their Guernseys to generate a milk with high fat content; this includes a dry grass hay and proprietary milk cow feed. The milk that is produced from their guernsey cows travels a whole 6 feet from their milking barn to their processing facility, where it is slow-batch pasteurized at 145 degrees fahrenheit, cooled down, and then proceeds to flavoring and bottling. This slow batch process allows 100% of the cream to stay in the milk, which is not homogenized, leading to an incredibly rich texture and flavor. Tammy went on further to explain that their milk is tested constantly, and that their most recent fat content test result was a whopping 5.1%. In comparison, regular whole milk typically has a 3.25% fat content. She proudly stated, “Our chocolate milk tastes like a malt.” In 2023 Two Guernsey Girls secured 1st place at the Wisconsin State Fair for best chocolate milk and 2nd place for best whole white milk. In 2024 they secured 1st place in both competitions.
Cheese, Ice Cream, and Beyond
Cheesemaking is a huge part of the Two Guernsey Girls product line. Back when Tammy and her daughter were raising and handling show cows, Tammy’s brother-in-law -who just happened to be a Master Cheesemaker- convinced Tammy to start producing with their specialty herd. This required Tammy to bring the cows to their 5-acre farm and construct a cheese facility next door to their cow barn. “No creamery was going to drive a truck into my yard for a few gallons of milk”, she joked. They decided to produce everything themselves in their own small Wisconsin micro dairy. Tammy has since gotten certified in cheese-making and produces small batches of cheese curds on a weekly basis. Two Guernsey Girls currently offers a variety of cheese curds with crowd-pleasing flavors as well as a small host of block cheddar cheese options.
Looking forward to 2025, Two Guernsey Girls is excited to enter the ice cream scene with a new ice cream facility that has been expanded from their current production facility. Their ice cream still has some testing to complete before they go to market, but they expect to be the Midwest’s only operating A2 ice cream producer by this summer. Also in the pipeline for this year is the expansion of their products in a local retail space as well as a milk delivery system that will allow them to reach a larger market in Wisconsin.
